Why Bread Rises in the Oven

Why does bread rise? It starts before the oven: fermentation-generated carbon dioxide gets trapped in dough’s bubble network, creating gas that heat can later enlarge.

As bubble pressure rises, gluten’s elastic network stretches. Further heating makes starch gelatinize and gluten proteins coagulate, turning flexible dough into a stable crumb.

As baking continues, water and alcohol evaporate from the loaf. The surface dries and stiffens, forming the crust while the interior loses moisture.
